Ley has a pretty good selection of Chorizo. They have one brand that, instead of being packaged as a tube, comes in a rectangular package of about 500 grams. Can't remember the name but they have Chorizo de Res, Chorizo de Cerdo, and Chorizo Mixto. They are really quite good and doesn't seem any fattier than 80/20 hamburger.
